BANANA NUT MUFFINS (chocolatecoveredkatie.com)
Such a great muffin, moist and delicious! I make minis, because they just satisfy that sweet craving you might have. There are a lot of plantbased banana nut muffin recipes out there, but I really like this one.
Enjoy making them!
1 cup ripe mashed bananas (2-3 large bananas)
2 tbsp Almond milk (or whatever plantbased milk you like)
2 tsp pure vanilla extract
2 tsp ACV or whiite vinegar
3 tbsp oil or 1/4 cup nut butter’
1 cup flour (I used all purpose, use what you like, spelt, white, oat)
1/2 tsp + 1/8 tsp salt
1/2 tsp each: baking powder and baking soda
1/3 cup sugar
1/4 cup chopped walnuts (optional)
1/4 tsp cinnamon (optional)
Instructions:
Whisk first 5 ingredients in a large bowl, and set aside for 10 minutes. Preheat oven to 350 F, and line (or grease, I lightly greased my muffin tin with plantbased butter). In a new bowl, stir together all remaining ingredients, here is where I added chopped walnuts. Pour dry into wet, and stir until just evenly mixed. Portion into the muffin tin (I used a mini-muffin tin) and used an ice cream scoop. Bake on the center rack, 19-20 minutes (I did 20 mins. and they were perfect) or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. I let mine rest about 10 mins., then removed from muffin tin and let them rest until cooled.
