Vegan Chickpea “Tuna” Salad
This is an easy chickpea “tuna” salad alternative, great for sandwiches or on crackers!
Here’s what you’ll need:
Ingredients:
1 15oz can chickpeas (drained and rinsed)
1/2 small red onion (roughly chopped)
1/3 cup celery (optional) chopped
1/4 -1/3 cup vegan may or tahini
2 small dill pickles
1 1/2 tbsp lime or lemon juice
2 tsp dijon mustard
1 nori sheet (crumbled into small pieces)
1 tsp capers
1/2 tsp dried dill
Salt and Pepper to taste
INSTRUCTIONS:
- Roughly chop red onion, celery and dill pickles, transfer to food processor along with all the remaining ingredients. If you don’t have a food processor, finely dice the veggies first, transfer the chickpeas to a medium-large bowl and mash with a fork or potato masher, then add the remaining ingredients and stir to combine.
- Pulse the mixture about 8-12 times until it is well incorporated but still has plenty of texture.
- Taste, adjust flavors with any of the ingredients!
- Make a sandwich or bring out the crackers, or a pita bread or a tortilla, add lettuce and tomato and EAT!!
